Traditional Banana Cake with Chocolate Butter Cream Frosting

Hi everyone,

 

It has been a while since my last blog. We have been busy cooking, researching new recipes, attending events and having a blast! It has been great but exhausting! So after a long hard week i just want to sit down with nice pot of tea and a scrummy yummy cake. Sunday nights are the best nights to indulge, cosy up by the fire in front of the telly and eat home cooked baked goods. So the recipe for today will be a yummy banana cake with chocolate butter cream frosting.

 

I chose this recipe because it brings back fond memories of our past. Our grandma would bake us the most delicious and moist banana cake for our birthdays and any other special occasion....So try out this recipe... the chocolate butter cream frosting is pure indulgence, you won't regret it <3 xx

 

Ingredients

125g Butter

1 cup Castor Sugar

2 Eggs size 7

1 Vanilla Pod - seeds

2-3 large Ripe Bananas

1/2 tsp Baking Soda

2 Tbsp hot milk

1 1/4 c Self Raising Flour

 

Preparation

Preheat oven to 150c fan bake or 170c standard.

Grease a 22cm cake tin with butter or spray.

Cut butter into small cubes, combine with castor sugar and beat until mixture is soft and fluffy.

Add eggs one at a time, beat well after addition.

Mash bananas and stir into mixture with vanilla seed.

Dissolve baking soda in milk and add to the beaten mixture.

Add the sifted flour and fold. Make sure you don't mix too much at this stage.

Put mixture into the greased cake tin.

Bake for 40 - 45 mins or until a skewer comes out clean.

Turn onto a cake rake and allow to cool.

 

Chocolate Butter Cream Frosting

1 cup Butter

3.5 cups Icing sugar

1/2 cup cocoa powder

1/2 tsp table salt

2 tsp Vanilla extract

4 Tbls Milk

 

Preparation

Cream the butter

Sift in the icing sugar and cocoa. Mix until both are absorbed by the butter.

Add vanilla, salt and milk - you may need more or less milk. If the mixture is too thick, then add a little more milk but be careful not to add to much or the mixture will be too runny!

Make sure the cake is completely cool before you try and ice it.

 

 

Eat and enjoy -  I like my slice with a cup of Organic India - Tulsi India Breakfast Tea :)
