We've been busy with the crazy season looming in on us, I wanted to share with you a simple recipe that will be a hit with any person young and old. Every event I have made this dessert for I have been inundated with requests for the recipe. So to satisfy all that can not make it to Samones on a weekly basis for their fix follow the recipe and let me know how you go....
Serves 6 people
6 bananas (not too ripe)
4 cups of canola oil for deep frying.
1 cup of rice flour
1 cup of plain flour
1 ½ cup of milk
1 teaspoon baking soda
½ teaspoon of salt
¼ cup sesame seeds
3 tablespoons of castor sugar
¾ cup shredded coconut
To Serve (These are optional, but decadently so good with the fritters-Available at good supermarkets-or you can try your hand at homemade!)
Coconut Ice Cream
Combine all the batter ingredients and stir just enough to mix together. Cover and leave to rest for 30mins in the fridge.
When ready to fry, peel and slice each banana lengthwise into four slices. (If batter is too thick just add a bit of cold water to the mix)
In a deep fryer heat oil up to 180 degrees.
Dip each piece of banana into the batter and deep fry until golden brown.
Remove from oil and drain onto a paper towel.
Serve with coconut ice cream and caramel sauce.
